Fantastic Food Friday

As the temperatures rise, what better than a Watermelon Salad to help you beat the heat.  Not only is watermelon a fun, low-fat way to hydrate, watermelons are also an excellent source of several vitamins and more:

Vitamin A - an antioxidant that helps maintain eye health
Vitamin B6 - helps brain function and helps convert protein to energy
Vitamin C - an immunity booster
Lycopene - a powerful antioxidant that helps fight heart disease and several types of cancer
Potassium - helps nerve and muscle function and helps maintain body's electrolyte balance
Amino Acids (Citrulline & Arginine) - help maintain arteries, blood flow & cardiovascular function

Watermelon Salad with Feta
Serves 6-8


    Ingredients 
  • 1/2 cup chopped red onion
  • 1/2 cup lime juice (4-6 limes, depending on how big and juicy the limes are)
  • A quarter of a medium sized watermelon, rind removed, black seeds removed, chopped into 1-inch cube pieces, about 8 cups
  • 1/2 cup crumbled feta cheese
  • 1/2 cup fresh mint leaves, chopped
  • 1/2 cup fresh parsley leaves, chopped
    DIRECTIONS 
  • Soak the chopped red onion in the lime juice while you are prepping the other ingredients for about 15 minutes.
  • Gently combine all ingredients into a large serving bowl.
  • Serve immediately. Salad will get soggy if kept overnight.
